Pork Tenderloin

Ingredients:
Pork tenderloin 1 lbs. Squash 2 sliced
Apple juice 16 oz. Small carrots 4 sliced
Apples 2 Cooking oil 1 tsp.
Large sweet onion 1 Sugar 2 tbs.
Zucchini 2 sliced Flour 2 tbs.
New potatoes 8 (cut into fourths)

Salt and pepper tenderloin to taste. I like lots of pepper! Place tenderloin in a foiled roasting pan. You should have plenty of foil to make a sort of package around the pork. Place the zucchini, squash, carrots, new potatoes, and one sliced apple into the roasting pan to cook with the pork. Pour 8 oz. of Apple juice into the package along with the pork and vegetables. Follow directions for cooking the pork provided on the label. 

Sauce

Chop the onion and the remaining apple into medium size pieces. Place .place the oil in a large skillet. Place the onion in the skillet first and cover with the two tablespoons of sugar. Let the onion caramelize. Add the apple and let the two simmer together until they get soft and about to fall apart. In another bowl whisk together the remaining apple juice and the flour. Add this to the onion and apple mixture, let it simmer until thick.
